The San Luis Valley is famous for its potatoes. Pure air, water, rich volcanic soils, cool nights and bright sunny days contribute to a rich flavor that is incomparable. Add to this our sustainable farming practices and you can be assured of the highest quality potatoes available anywhere. All our potatoes are certified organic by the State of Colorado.

• Russet Century - A traditional baking potato with a brown smooth skin and brilliant white flesh. $22
• Sangre Red - Named for our famous Sangre de Cristo range of mountains that frame the valley to the east, this red variety remains the local favorite. The creamy and sweet white flesh is offset by a dark red skin. $24
• Yellow Finn - This old variety has a creamy yellow flesh that tastes and looks as though it has already been buttered, and a thin tender smooth skin. $28
• German Butterball - A newer variety that sports a more substantial skin, a more textured flesh resembling a russet that is also buttery yellow. $30
• All Blue - This potato is blue through and through. It makes a great baker, and an even better masher. $42
• Fingerling - These heirloom varieties look like they were dug from the jungles of South America. They are long and thin with deeply set eyes and come in many colors. $75
